AS WE ENTER OUR 4TH YEAR, WE ARE EXTREMELY EXCITED TO INTRODUCE OUR NEW EXECUTIVE CHEF, JAMES CONNAUGHTON. HE GRADUATED BOCES CULINARY PROGRAM WITH HIGH HONORS IN 1995, AND THEN HE ENTERED THE CULINARY INSTITUTE OF AMERICA IN HYDE PARK, NEW YORK. HE GRADUATED AND RECEIVED HIS DEGREE IN 1997. JAMES CONTINUED TO GAIN EXPERIENCE IN THE CULINARY ARTS AS A CHEF AT MANY OF ORANGE COUNTIES FINEST EATERIES, SUCH AS THE HAYLOFT, VAN DYKE VALLEY, THE WARWICK COUNTRY CLUB AND THE LANDMARK INN, WHERE HE RECEIVED THE AWARD FOR BEST APPETIZER IN ORANGE COUNTY, THE LOBSTER EGG ROLL. JAMES IS VERY CREATIVE, HIS SPECIALTIES ARE VERY DIVERSE. THEY RANGE FROM ASIAN TO MEDITERRANEAN TO AMERICAN. HE HAS A REPERTORY OF MANY INNOVATIVE SAUCES AND NOUVEAU CUISINES.
P & J’S HAS CAREFULLY CREATED A NEW MENU THAT ENCOMPASSES ITEMS THAT HAVE MADE P&J’S CUSTOMERS KEEP COMING BACK FOR FOUR YEARS, AS WELL AS; ADDED MANY OF JAMES’S NEW AND EXCITING ITEMS. THEY INCLUDE THE SHRIMP SPRING ROLL, OUR FAMOUS BACK FIN LUMP CRAB MEAT CAKES, STUFFED PORK CHOP WITH CARAMELIZED APPLES AND ONIONS FINISHED WITH APPLEJACK BRANDY, FILET MIGNON THAT MELTS IN YOUR MOUTH, HERB ROASTED HALIBUT AND OUR TENDER PAN SEARED SEA SCALLOPS WITH A LEMON BUR BLANC.
AT P & J’S WE PRIDE OURSELVES ON OUR FIRST CLASS SERVICE AND KNOWLEDGE OF FOOD AND WINE.
